Sweet Potato Brownies


In honor of World Baking Day and coming into a cold snap this Winter - nothing sounds better than cozying up on the couch with a warm gooey brownie and a cup of tea. Well, we have the perfect brownie recipe that will keep your taste buds and tummy happy.

Combining the deliciousness of a brownie with one of winter’s most beloved vegetables – sweet potatoes! Bear with us, we know this sounds a bit of the comfort zone as when you think chocolate, you don’t natural think sweet potato. However, these golden beauties are packed full of vitamins and minerals, it really is the consistency that makes it a fabulous addition to your brownie batter. We have seen avocado been substituted into cakes so why not sweet potatoes in brownies!

Recipe


Serving: 16 brownies

Time: 90 minutes (Including Prep Time and Cooling Time)


Ingredients:

  • ½ cup coconut or granulated sugar
  • ⅓ cup wholemeal flour
  • ⅓ cup unsweetened cocoa powder
  • 1 ½ teaspoon baking soda
  • ⅛ teaspoon salt
  • 1 cup almond butter
  • ¾ cup mashed cooked sweet potato
  • ¼ cup honey
  • 1 teaspoon vanilla
  • 3-ounce bittersweet chocolate, finely chopped

Sweet Potato

Method:

  1. Preheat your oven to 165°C and line square baking pan with baking paper.
  2. In a bowl combine the dry ingredients including: coconut, flour, unsweetened cocoa powder, baking soda and salt. Mix until combined.
  3. In a separate larger bowl, combine the wet ingredients including: almond butter, mashed sweet potato, honey and vanilla. Once combined, slowly stir in the dry mixture.
  4. Once fully combined into a batter consistency, gently stir in chocolate. Spread batter evenly into the pan.
  5. Bake for 25 to 30 minutes or until the brownie mixture has risen and appears dry.
  6. Remove from oven and cool in pan on a wire rack. Allow to sit for 10 minutes.
  7. Once cooled, dust with cocoa power and enjoy!
